Remember the article about the instant spring window box? Well today was the day to pick the first fruits from the window and mix them into a stir fry. Two very happy hot peppers came indoors and we washed them well. It's amazing eating your own fresh produce from the window. A neighbor chatted with us about their flower box up above and we discussed the garden next door.
The tomato is red and firm and the other peppers are coming along nicely. On another note. Some of the cilantro didn't make it and the basil looks rough, but we grew those from seed along side of the other plants as an experiment to see how seeds would do in these boxes. Not so much. On a brighter side the peppers are delicious and I can't wait to eat that tomato.
Here's a recipe that's quick to whip up. Stir fry TOFU with mixed vegetables and spicy peppers.
Sorry I was so hungry I forgot to take pictures of the stir fry. But here's the recipe: One package firm Tofu, One package frozen mixed vegetables (or fresh veggies if you have them!), 1/4 cup sesame oil, 1/4 cup rice vinegar, 1/4 cup ponzu sauce (or use 1/8 soy sauce and 1/8 cup fresh lemon juice) 1 medium jalapeno pepper finely chopped, 1 med cubanelle pepper finely chopped. Heat pan, put oil, peppers and mixed vegetables into a large wok and fry until veggies are thawed - then mix in tofu and fry until slightly browned - then mix in vinegar and ponzu and fry until most of the liquid evaporates stirring constantly.
